Thogari Kaalu Saaru (Pigeon Pea Sambar):

This is a classic South Indian dish that is both flavorful and nutritious. It's a perfect accompaniment to rice or roti.

Ingredients:

* 1 cup fresh togari kai (green pigeon peas)

* 1 tablespoon tamarind paste

* 1 teaspoon sambar powder

* 1/2 teaspoon turmeric powder

* 1/4 teaspoon red chili powder

* 1 teaspoon coriander powder

* 1 teaspoon cumin seeds

* 1 tablespoon vegetable oil

* 1 teaspoon mustard seeds

* 1 teaspoon urad dal (black gram)

* 1 teaspoon chana dal (split chickpea)

* 1 sprig curry leaves

* 1 onion, chopped

* 1 tomato, chopped

* Salt to taste

* Water as needed

Instructions:

* Prepare the Togari Kai:

* Remove the outer husk from the togari kai.

* Wash them thoroughly.

* Pressure cook the togari kai with a pinch of turmeric powder and water until they are soft.

* Make the Sambar Base:

* Heat oil in a pan.

* Add mustard seeds, urad dal, and chana dal. Let them splutter.

* Add curry leaves, chopped onion, and tomato. Sauté until the onion turns golden brown.

* Add sambar powder, turmeric powder, red chili powder, coriander powder, and salt. Mix well.

* Add the cooked togari kai and enough water to make a thin gravy.

* Bring to a boil, then simmer for 10-15 minutes, or until the flavors are well combined.

* Tempering:

* Heat a small amount of oil in a tempering pan.

* Add mustard seeds and let them splutter.

* Add curry leaves and pour the tempering over the sambar.
