Recipe for Oyster Mushroom | ಆಯಿಸ್ಟರ್ ಅಣಬೆ Curry:
Ingredients:
250g oyster mushrooms,sliced
2 medium onions, chopped
3 cloves of garlic, minced
1 medium tomato, diced
1 tsp ground cumin
1 tsp curry powder
1/2 tsp turmeric
1/2 tsp red chili powder
Salt, to taste
2 tbsp vegetable oil
2 tbsp coconut milk
Fresh cilantro, for garnish

Instructions:
1. Heat oil in a pan over medium heat. Add onions and sauté until they're translucent.

2. Add garlic, cumin, curry powder, turmeric, and chili powder. Cook for 1 minute, stirring constantly.

3. Add the sliced mushrooms and cook until they release their moisture and start browning.

4. Add the diced tomato and cook for another 2-3 minutes.

5. Pour in the coconut milk and stir well. Bring the mixture to a simmer.

6. Reduce heat to low and let the curry simmer for 10-12 minutes or until the sauce thickens.

7. Season with salt to taste.8. Garnish with fresh cilantro and serve with rice or roti.

Recipe for Oyster Mushroom Biryani | ಆಯಿಸ್ಟರ್ ಅಣಬೆ ಬಿರ್ಯಾನಿ:

Ingredients:For the rice:-
1 cup basmati rice-
2 cups water-
1 tsp ghee-
1 tsp salt

For the mushroom masala:-
250g oyster mushrooms, sliced-
2 medium onions, chopped-
2 cloves of garlic, minced-
1 tsp ground cumin-
1 tsp coriander powder-
1 tsp garam masala-
1 tsp turmeric-
1 tsp red chili powder-
Salt, to taste-
2 tbsp ghee

For the biryani assembly:-
1 tsp saffron threads, soaked in
1 tbsp hot water-
1 tsp rose water (optional)- Fresh cilantro, for garnish

Instructions:

1. Prepare the rice: Rinse the rice and soak it in water for 30 minutes. Drain and cook the rice with 2 cups water, ghee, and salt until it's 70% cooked. Drain excess water and set aside.

2. Prepare the mushroom masala: Heat ghee in a pan over medium heat. Add onions and sauté until they're translucent. Add garlic, cumin, coriander powder, garam masala, turmeric, and chili powder. Cook for 1 minute, stirring constantly. Add the sliced mushrooms and cook until they release their moisture and start browning. Season with salt to taste.

3. Assemble the biryani: In a large, heavy-bottomed pot or Dutch oven, create a layer of cooked rice. Add a layer of mushroom masala on top of the rice. Repeat this process, ending with a layer of rice on top.

4. Finish with aromatics: Drizzle the soaked saffron threads and rose water (if using) over the top layer of rice. Cover the pot with a tight-fitting lid and simmer over low heat for 10-15 minutes.5. Serve: Turn off the heat and let the biryani rest for

5 minutes. Fluff the rice gently and garnish with fresh cilantro. Serve hot and enjoy!

Tips:
